Instructions

- Slowly blend in 1/4 cup olive oil until creamy. Taste and adjust lemon or salt.
- For tzatziki: mix 1 cup Greek yogurt, grated drained 1/2 cucumber, 1 tbsp dill, 1 clove minced garlic, and 1 tbsp lemon juice. Chill.
- Warm pita triangles in oven at 350°F (175°C) for 5 minutes.
- Heat falafel per package or pan-fry homemade falafel 3–4 minutes each side until crisp.
- Arrange hummus, tzatziki, tabbouleh, falafel, pita, and parsley on a large board.
- Drizzle hummus with olive oil and sprinkle paprika or za’atar for color.
- Do a taste check for seasoning and add lemon or salt as needed.
